Interview with Annika Clinkett – Owner of Nika’s Kitchen
Tell us briefly what you do?
I’m a chef, specialising in plant-based foods and vegan nutrition.
How did you become a vegan chef?
Cooking was always a passion from childhood. Myself and brother (also a chef) used to experiment on the weekends and by 11/12 years old, we were making Sunday dinners including natural juices! One day, around 8 years ago; I literally had a moment, walking pass a windowed shop after work and saw my body language – looking so drained and unhappy. I didn’t recognise myself! That evening I sat and reflected over what needed to change…I asked myself “what do you love to do the most” and of course it is cooking and feeding others. Just like that, I was at the culinary school tour the following week, quit my job and began my journey as a trained chef. No looking back!
What do enjoy about cooking and food?
I enjoy the colours, smells and the joy it brings to not just myself when I taste, but others whom I nourish with my culinary gift.
Any tips for self-love or couples this February?
As one of my mentors taught me…be free within yourself, everything else is secondary. Free yourself from guilt, regret and heartbreak and open up for the beautiful things that the universe is eagerly awaiting to gift you!
Please can you share with us one of your delicious chocolate recipes?
One of the first desserts I attempted when going Plant-based was the chocolate mousse
- 1 cup coconut milk
- 1/3 cup cacao
- 1/4 avocado
- 1 Tbsp coconut sugar
- 1 Tbsp maple syrup
- Peel avocado and place along with all other ingredients in blender.
- Blend until smooth consistency is reached.
- Can serve immediately or leave in fridge to set.
- Store in airtight container for up to 3 days.
