MamaSia’s Christmas Recipes

We are officially in the month of indulgence. Yes, that’s right love it or loathe it, Christmas is here! We’re bringing you some healthy and nutritious recipes, if you’re watching your waistline this month. Balance and moderation is the key to our heart, and we want to bring some alternative ways of using our wellness products to get all that goodness incorporated into your diet. Presenting you, with our trio of healthy [ish] recipes.

 

 

Moringa & Thyme roasted vegetables

Suitable for vegans and gluten free

Serves: 4

INGREDIENTS:
  • 1 tsp MamaSia’s Moringa Powder
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1/4 teaspoon nutmeg
  • 1 Lemon & 1 orange
  • 2 large parsnips
  • 4 carrots 2 Beetroots
  • 3 garlic cloves with skin on
  • A few slices of orange
  • Sprig of rosemary [optional] & Thyme
  • Salt & Pepper
INSTRUCTIONS:
  1. Preheat the oven to 180C.
  2. Wash your vegetables and chop into chunks. Place the prepared veg, lemon slices and garlic cloves in a roasting dish.
  3. Juice your orange. Take a tablespoon of the fresh juice and add together with Moringa Powder, honey and olive oil, mix well with a whisk. Coat your vegetables with your zesty juice by pouring mixture over the vegetables. Season very well with salt and pepper.
  4. Place your rainbow vegetable dish in the oven for 45 minutes or until your vegetables are soft and crisp at the edges. After 35 minutes add your thyme and nutmeg leaving some to be scattered over your roasted dish after removing from the oven. Rosemary can also be added for more fragrance.

 

 

Spiced Apple, Baobab & Cinnamon Polenta Cake

Suitable for vegans and gluten free

INGREDIENTS:
  • 200g ground almonds
  • 120g polenta
  • 1 tsp baking powder
  • 3 tbs of cinnamon
  • 3 tbs of MamaSia’s Baobab Powder
  • 3 large eggs
  • 200g brown sugar or 3 tbs honey
  • 200ml of olive oil
  • 2 large eating apples (about 350g) peeled, cored and cut into 1cm dice
  • 50g blanched hazelnuts, roughly chopped
INSTRUCTIONS
  1. Preheat the oven to 180°C, fan 160°C, gas 4. Line the base and sides of a 8in (20cm) diameter springform tin with baking paper.
  2.  Place the almonds, polenta, baking powder, cinnamon, baobab powder and a pinch of salt into a large bowl and mix together thoroughly. Whisk the eggs and sugar/ honey in a large bowl with a mixer until pale and thick [4 minutes]. Add some olive oil whilst still mixing. Once emulsified, add your chopped apples and the stir in with a metal spoon until evenly mixed.
  3.  Spoon the mixture into the cake tin and sprinkle over the chopped hazelnuts. Bake in the middle of the oven for about 1 hour.
  4. Leave to cool completely in the tin, for some extra sweetness sprinkle some baobab powder on top. Run a knife around the edge of the cake before releasing from the tin.

 

 

Hibiscus Pomegranate Rosemary Gin Cocktail

Serves: 2

INGREDIENTS:
  • 2 teaspoons of Mamasia’s Hibiscus powder
  • 2-3 shots of gin
  • 1 fresh lime
  • 2 teaspoons of honey
  • Crushed ice
  • Lime wedges
  • Pomegranate juice
  • Pomegranate arils for garish
  • Fresh rosemary
  • 2 x150ml Tonic water
INSTRUCTIONS:
  1.  Put 2 cocktail glasses in the fridge to chill.
  2.  In a blender, add the Hibiscus powder, the honey, pomegranate juice and lime juice and blend until combined.
  3. Using a cocktail shaker, transfer the liquid into the shaker. Add your gin and shake vigorously.
  4. Fill your chilled glasses with a few pomegranate arils and crushed ice. Pour your hibisculicious cocktail into your chilled glasses and top up with tonic.
  5. Garnish with fresh rosemary and lime wedges.
